Almond Filling

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare Almond Filling: In a small bowl, combine almond flour, granulated sugar, softened butter, and almond extract. Mix until smooth and creamy to create the almond filling.
- Prepare Pastry Squares: Roll out the thawed puff pastry sheet on a lightly floured surface into a 10×10-inch square. Then, cut the pastry into 16 equal small squares.
- Fill and Fold: Place about 1 teaspoon of the almond filling in the center of each pastry square. Fold the corners toward the center to encase the filling, pressing gently to seal the edges.
- Apply Egg Wash and Toppings: Brush each filled square with the beaten egg to give a golden finish. Sprinkle sliced almonds on top of each for added texture and flavor.
- Bake: Arrange the filled pastry bites on the prepared baking sheet and bake for 15–18 minutes, or until the bites are puffed up and golden brown.
- Cool and Serve: Allow the almond croissant bites to cool slightly on a wire rack. If desired, dust them lightly with powdered sugar before serving for an elegant touch.
