Description

Sourdough bread loaded with crispy bacon, creamy guacamole, and melted Colby Jack cheese, grilled to perfection for a crunchy, cheesy, and flavorful sandwich experience. This Bacon Guacamole Grilled Cheese combines savory, creamy, and crunchy textures into one satisfying main dish.

Ingredients

Scale

Main Components

  • 3 to 4 tortilla chips, crushed (optional, for added crunch)
  • 4 bacon strips, cooked till crispy
  • 2 tablespoons guacamole, softened at room temperature
  • 1/2 cup shredded Colby Jack cheese
  • 2 slices sourdough bread
  • 2 tablespoons salted butter, softened

Instructions

  1. Prepare the Bread: While your pan warms up over medium heat, smear butter over one side of each slice of sourdough bread. This helps achieve a golden, crispy exterior when grilled.
  2. Assemble the Sandwich: Lay one bread slice on a clean surface with the buttered side down. Sprinkle half of the shredded Colby Jack cheese evenly over the plain side of the bread. Spread the softened guacamole over the cheese layer. Next, pile on the crispy bacon strips. If you like some crunch, sprinkle the crushed tortilla chips on top of the bacon. Finish by spreading the remaining cheese over the fillings. Top with the second slice of bread, buttered side facing up.
  3. Cook the First Side: Carefully place the assembled sandwich onto the hot skillet. Let the bottom cook until it turns toasty brown and crisp, which usually takes about 2 to 4 minutes.
  4. Flip and Cook the Other Side: Using a spatula, gently flip the sandwich. Cook the other side for another 2 to 4 minutes, or until it turns golden brown and the cheese inside is fully melted and gooey.
  5. Serve: Remove the grilled cheese from the skillet and enjoy immediately while warm and melty.

Notes

  • For extra crunch, don’t skip the crushed tortilla chips inside the sandwich.
  • Cook bacon ahead of time until crispy for best texture.
  • Use softened butter to ensure even spread on bread slices.
  • Adjust the heat to medium to prevent burning and allow cheese to melt slowly.
  • Serve immediately to enjoy the cheese at its gooey best.
