French Bread Base

  • 1 loaf of French Bread, cut in half lengthwise

Buffalo Chicken

  • 2 small chicken breasts, cut into 1 inch pieces
  • 1 Tablespoon olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 2/3 cup buffalo wing sauce

Toppings and Finishing

  • 1/4 cup ranch dressing
  • 1 1/2 cups fontina cheese, freshly grated
  • 1 cup mozzarella cheese, freshly grated
  • 4 green onions, thinly sliced
  • 1 bunch cilantro, chopped


Instructions

  1. Broil the French Bread: Place the French bread, cut side up, on a large cookie sheet. Broil in the oven for about 2 minutes, then rotate and broil another 2 minutes, until the tops are slightly golden. Remove and let cool.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and add olive oil. Season the chicken pieces with salt and pepper. Cook chicken in the skillet for 10 to 12 minutes until no longer pink. Add minced garlic; cook and stir for 1 more minute. Pour buffalo wing sauce over the chicken, stir to coat, reduce heat to low, and simmer for 5 minutes. Remove from heat.
  3. Assemble the Pizza: Brush 2 to 3 tablespoons of ranch dressing onto each half of the French bread. Drizzle 2 to 3 tablespoons of buffalo wing sauce on top. Evenly sprinkle fontina cheese over the bread, then spoon the buffalo chicken with sauce evenly over the cheese. Top with mozzarella cheese.
  4. Broil Until Cheese Melts: Return the assembled bread to the oven and broil on high for 5 minutes, watching closely to prevent burning, until the cheese is melted and bubbly.
  5. Garnish and Serve: Remove from the oven. Drizzle additional buffalo wing sauce over the top, then sprinkle with chopped green onions and cilantro. Cut into slices and serve immediately.
