Meatloaf:

  • 1 1/2 pounds ground beef
  • 1/2 pound Italian sausage
  • 1 small onion, finely chopped
  • 1 small green bell pepper, finely chopped

  • 1 cup shredded provolone cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 2 large eggs
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)

  • 1/2 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese


Instructions

  1. Preheat and Prep Pan: Preheat the oven to 375°F (190°C). Lightly grease a loaf pan to prevent sticking.
  2. Sauté Vegetables: In a large skillet over medium heat, sauté the finely chopped onion, green bell pepper, and minced garlic until softened, approximately 3 to 4 minutes. Remove from heat and allow to cool slightly.
  3. Mix Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, Italian sausage, sautéed vegetables, shredded provolone cheese, breadcrumbs, milk, eggs, Worcestershire sauce, salt, black pepper, smoked paprika, and crushed red pepper flakes if using. Mix gently until all ingredients are evenly incorporated, taking care not to overwork the meat to keep the meatloaf tender.
  4. Shape and Assemble: Shape the meat mixture into a loaf and place it in the prepared loaf pan. Evenly spread the marinara sauce over the top of the meatloaf, then sprinkle with shredded mozzarella cheese.
  5. Bake: Bake in the preheated oven for 50 to 60 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
