Description

This Cheesy Taco Tater Tot Bake is a quick and delicious family favorite that combines seasoned ground beef, black beans, corn, and crispy tater tots all topped with melted cheese. Perfect for an easy weeknight meal that everyone will love!

Ingredients

Scale

Meat & Protein

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed

Vegetables & Others

  • 1 cup corn, frozen or canned
  • 1 cup salsa

Seasoning & Cheese

  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)

Frozen Items

  • 1 bag frozen tater tots

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the dish.
  2. Cook Beef: In a skillet over medium heat, cook the ground beef until it is fully browned. Drain the excess fat to keep the dish leaner.
  3. Season Beef: Add the taco seasoning packet and salsa to the cooked ground beef. Stir well to combine all flavors evenly.
  4. Layer Ingredients: In a baking dish, evenly layer the beef mixture first, then add the drained black beans and corn on top.
  5. Add Tater Tots and Cheese: Arrange the frozen tater tots over the layered mixture, then generously sprinkle shredded cheese over the top.
  6. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
  7. Cool & Serve: Remove the bake from the oven and allow it to cool for a few minutes before serving to let the flavors meld and to avoid burns.

Notes

  • For extra spice, add jalapenos to the beef mixture or on top before baking.
  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • Use a Mexican cheese blend for a richer flavor.
  • Ensure the tater tots are spread evenly for uniform crispiness.
  • Serve with sour cream and fresh cilantro for added freshness.
