Lasagna Roll-Ups
- 8 lasagna noodles
- 1 lb. cooked shredded chicken
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 3 cups freshly grated Mozzarella cheese, divided
Sauce
- 2 cups Alfredo sauce, divided
Garnish
- Chopped parsley (optional)
Instructions
- Preheat and prep baking dish: Preheat the oven to 375 degrees F. Spray a 9×13-inch baking dish with non-stick spray and set aside.
- Cook noodles: Boil the lasagna noodles in a large pot of water according to the package directions. Drain the noodles, then carefully lay them out on parchment paper to cool and dry.
- Make filling: In a medium bowl, combine half of the Alfredo sauce, shredded chicken, garlic powder, Italian seasoning, salt, pepper, and 1 cup of the mozzarella cheese. Stir to mix evenly and set aside.
- Assemble roll-ups: Divide the chicken Alfredo mixture evenly among the 8 noodles, spreading the mixture evenly over each noodle. Roll up each noodle starting at one end. Place the roll-ups seam-side down in the prepared baking dish.
- Add sauce and cheese: Pour the remaining Alfredo sauce evenly over the top of the roll-ups. Sprinkle the remaining 2 cups of mozzarella cheese evenly on top.
- Bake: Bake uncovered for 20 minutes or until the cheese is melted, bubbly, and slightly golden.
- Garnish and serve: Remove from the oven and garnish with chopped parsley, if desired. Serve warm and enjoy your delicious Chicken Alfredo Roll-Ups.
