Description

This Chicken Pot Pie Pierogi Casserole is a cozy and cheesy comfort food dish that combines classic cheddar pierogies with creamy chicken, mixed vegetables, and melted cheddar cheese. Perfect for an easy weeknight dinner, it’s fast to prepare and baked to bubbly perfection.

Ingredients

Scale

Main Ingredients

  • 2 (16-oz) packages frozen Classic Cheddar Pierogies
  • 4 cups cooked chopped chicken
  • 2 cups frozen mixed vegetables

Sauce & Seasoning

  • 2 (10.5-oz) cans Unsalted Cream of Chicken Soup
  • 1 (16-oz) container sour cream
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 375ºF (190ºC) and lightly spray a 9x13x2-inch baking dish with cooking spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the frozen cheddar pierogies, cooked chopped chicken, frozen mixed vegetables, cream of chicken soup, sour cream, onion powder, garlic powder, and pepper. Mix everything thoroughly so all the ingredients are well incorporated.
  3. Assemble and Bake: Spread the mixture evenly into the prepared baking dish. Top with shredded cheddar cheese. Bake uncovered in the preheated oven for 35 to 45 minutes, until the casserole is bubbly and the cheese is melted and slightly golden.

Notes

  • You can substitute cooked rotisserie chicken for convenience.
  • Frozen mixed vegetables like peas, carrots, and corn work best for this recipe.
  • Allow the casserole to rest for a few minutes before serving to set.
  • For a spicier kick, add a pinch of cayenne pepper or smoked paprika.
  • Store leftovers covered in the refrigerator for up to 3 days.
