Ingredients
Scale
Brownie Layer
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
Cookie Dough Layer
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup light brown sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour (heat-treated)
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a mini muffin tin to prevent sticking.
- Make Brownie Batter: In a medium bowl, combine melted butter and granulated sugar until smooth. Add eggs and vanilla extract, mixing thoroughly. Stir in cocoa powder, flour, salt, and baking powder until just blended to avoid overmixing.
- Bake Brownie Bites: Spoon the brownie batter evenly into the prepared muffin tin, filling each cup about two-thirds full. Bake for 12 to 15 minutes, or until the tops are set and a toothpick inserted comes out with a few moist crumbs. Let cool in the pan for 10 minutes then transfer to a wire rack to cool completely.
- Prepare Cookie Dough Layer: While brownies cool, in another medium bowl, cream softened butter with granulated and brown sugar until light and fluffy. Mix in milk and vanilla extract. Gradually stir in heat-treated flour and salt until a soft dough forms, then fold in mini chocolate chips evenly.
- Assemble Bites: Once the brownie bites are fully cooled, top each with a spoonful of the cookie dough mixture. Gently press to flatten the dough slightly to adhere to the brownie base.
- Serve or Store: Serve the brownie bites immediately for a soft cookie dough texture, or chill them to let the cookie dough firm up before serving.
Notes
- To heat-treat flour, microwave it in a heat-safe bowl for 1 minute 15 seconds, stirring every 15 seconds to eliminate harmful bacteria.
- Store brownie bites in the refrigerator for up to 5 days to maintain freshness.
- For longer storage, freeze the bites in an airtight container and thaw before serving.
