Description

These Cottage Cheese Egg Bites are light, creamy, and packed with protein, making them a perfect grab-and-go breakfast or snack. Blending the eggs with cottage cheese creates an ultra-smooth and fluffy texture. Customize with your favorite add-ins like spinach and feta or bacon and cheddar for a variety of flavor combinations.

Ingredients

Scale

Main Ingredients

  • 6 large eggs
  • 1 cup cottage cheese (full-fat for creamier texture or low-fat)
  • ½ cup shredded cheese (cheddar, mozzarella, or Monterey Jack)
  • Salt & pepper to taste

Add-ins (choose one combo)

  • Spinach + feta
  • Bacon or sausage + cheddar
  • Bell peppers + onions
  • Mushrooms + Swiss
  • Broccoli + cheddar

Instructions

  1. Heat oven: Preheat your oven to 350°F (175°C) and grease a muffin tin thoroughly or line it with silicone liners to prevent sticking.
  2. Blend for fluffiness: In a blender, combine the eggs and cottage cheese and blend until completely smooth. This step is essential to achieve the light, fluffy texture of the egg bites.
  3. Season & mix: Transfer the egg mixture to a bowl and stir in salt, pepper, shredded cheese, and your choice of cooked add-ins to evenly distribute flavors.
  4. Fill & bake: Pour the mixture into the prepared muffin cups, filling each about three-quarters full. Bake for 20–25 minutes or until the egg bites are set and lightly golden on top.
  5. Cool slightly: Allow the egg bites to rest in the muffin tin for 5 minutes to firm up before removing and serving.

Notes

  • Store cooked egg bites in the refrigerator for up to 4–5 days or freeze for up to 2 months.
  • Reheat by microwaving for 20–30 seconds or warming in the oven.
  • For extra flavor, add a splash of hot sauce or sprinkle with everything-bagel seasoning before baking.
  • To mimic Starbucks-style texture, bake the egg bites in a water bath.
  • Optional: Add a scoop of unflavored protein powder to the egg mixture for extra protein boost.
