Ingredients
Scale
Meat Mixture
- 1 lb lean ground beef, browned and drained
- 1 envelope (3 tablespoons) taco seasoning
- 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles, drained
Other Ingredients
- 1 1/2 cups sharp cheddar cheese, shredded (or Mexican blend)
- 24 wonton wrappers
- Nonstick cooking spray (for greasing muffin tin)
Instructions
- Preheat Oven: Preheat the oven to 375 degrees Fahrenheit. Lightly coat a standard muffin tin with nonstick cooking spray to prevent sticking.
- Prepare Taco Mixture: In a medium bowl, combine the browned and drained ground beef with the taco seasoning and drained diced tomatoes with green chiles. Mix thoroughly to ensure the beef is evenly coated and flavors are well incorporated.
- Assemble Cups: Place a wonton wrapper into each muffin cup, pressing it gently to line the cup. Add a spoonful of the taco mixture, then sprinkle some shredded cheese on top. Add another wonton wrapper layer, followed by more taco mixture, and finish with a final layer of shredded cheese.
- Bake: Place the muffin tin in the preheated oven and bake for 11 to 13 minutes, or until the wonton wrappers are golden brown and the cheese is melted and bubbly. Remove from oven and let cool slightly before carefully removing the taco cups from the tin.
Notes
- Use lean ground beef for a healthier option and to minimize grease.
- Make sure to drain the cooked beef and the canned tomatoes well to avoid sogginess.
- You can substitute shredded sharp cheddar with a Mexican cheese blend for a different flavor profile.
- Wonton wrappers crisp up nicely to create a crunchy shell — do not substitute with flour tortillas as they won’t crisp the same way.
- Serve with salsa, guacamole, sour cream, or your favorite taco toppings for extra flavor.
- These taco cups can be prepared ahead of time and refrigerated before baking.
