Ingredients

Scale

Main Ingredients

  • 1 pound Frozen Tater Tots (These add a satisfying crunch; feel free to swap with diced roasted potatoes.)
  • 1 tablespoon Olive Oil (Can substitute with any neutral oil.)
  • 1 pound Breakfast Sausage (Consider using turkey sausage for a lighter option.)
  • 6 large Eggs
  • 1/2 cup Half and Half (Can substitute with equal parts milk and cream or just milk.)
  • to taste Kosher Salt
  • to taste Freshly Ground Black Pepper
  • 1 can Refried Beans (Can substitute with black beans for a different flavor.)
  • 4 large Flour Tortillas (Whole wheat tortillas are a nutritious substitute.)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1 cup Roma Tomatoes (Can leave out for a simpler burrito.)
  • 1/4 cup Chopped Fresh Cilantro Leaves (Can substitute with green onions.)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking and help with browning.
  2. Cook Tater Tots: Bake the frozen tater tots on the prepared baking sheet according to package instructions, usually about 20 minutes, until they are crispy and golden brown. Then set them aside to cool slightly.
  3. Cook Sausage: Heat the olive oil in a skillet over medium-high heat. Add the breakfast sausage and cook it until nicely browned, which should take about 3 to 5 minutes.
  4. Prepare Scrambled Eggs: In a bowl, whisk the eggs. Add them to the skillet with the sausage and cook until they are just set, stirring occasionally. Then stir in the half and half to thicken the eggs and season with kosher salt and freshly ground black pepper to taste.
  5. Assemble Burritos: Lay each flour tortilla flat and spread a generous amount of refried beans down the center. Layer on the cooked tater tots, sausage and egg mixture, shredded cheddar and Monterey Jack cheeses, chopped roma tomatoes, and cilantro.
  6. Fold Burritos: Fold the sides of each tortilla in toward the center and then roll tightly burrito-style, tucking in the ends to secure the filling. Place the seam side down on the lightly oiled baking sheet.
  7. Bake Burritos: Bake the assembled burritos in the preheated oven for 12 to 15 minutes, until heated through and the tortillas have become slightly golden and crisp on the outside.
  8. Serve or Freeze: Serve immediately for a warm meal or let the burritos cool completely. Once cooled, wrap them airtight for freezing to enjoy later.

Notes

  • Substitute turkey sausage to reduce the fat content for a lighter option.
  • Whole wheat tortillas add extra fiber and nutrients.
  • For a dairy-free alternative, omit half and half and cheese or use vegan substitutes.
  • You can swap tater tots with diced roasted potatoes or sweet potatoes for a different flavor and texture.
  • These burritos freeze well for up to 3 months. Reheat in the oven or microwave before eating.
  • Adjust seasoning like salt and pepper according to personal taste and dietary needs.
