- 1 cup black beans, rinsed
- 1 large tomato, chopped or 1 cup sliced cherry tomatoes
- 1/2 cup shredded cheddar cheese
Toppings and Dressing
- 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
- 1 cup Catalina dressing or your favorite salad dressing (ranch dressing optional)
- Fresh cilantro (optional, for garnish)
Instructions
- Cook Ground Beef: Brown and crumble the lean ground beef in a large skillet over medium-high heat. Once cooked through, drain the excess grease thoroughly to keep the salad fresh and not greasy.
- Season Beef: Add the taco seasoning packet and the required amount of water per the seasoning instructions. Stir the mixture until it comes to a boil, then reduce the heat to low and let it simmer for 10 minutes. Once done, remove from heat and allow the beef to cool slightly to avoid wilting the salad greens when combined.
- Prepare Salad Base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. This creates a colorful, flavorful base packed with texture and nutrients.
- Add Beef and Toss: Add the slightly cooled seasoned beef to the salad bowl. Gently toss all ingredients together to evenly distribute the beef without damaging the lettuce leaves.
- Chill or Serve: You can either serve the salad immediately or chill it in the refrigerator. Important: do not add the Doritos chips until you are ready to serve to keep them crisp.
- Add Doritos and Dressing: When ready to eat, sprinkle the broken Doritos pieces and your choice of dressing (Catalina or ranch) over the salad. Toss everything lightly to coat the salad and chips evenly.
