Description

This Easy Chicken Gyro Bowl recipe combines marinated and perfectly cooked chicken with fresh vegetables, olives, feta cheese, and creamy tzatziki sauce for a delicious Mediterranean-inspired meal. Ideal for a quick and healthy dinner, it’s packed with vibrant flavors and simple ingredients.

Ingredients

Scale

Marinade and Chicken

  • 16 ounces Chicken
  • 2 cloves Garlic
  • 1 tablespoon Red Wine Vinegar
  • 2 tablespoons Lemon juice
  • 2 tablespoons Extra virgin olive oil
  • 3 tablespoons Greek yogurt
  • 2 teaspoons Dried oregano
  • ¾ teaspoon Salt
  • ½ teaspoon Black pepper

Vegetables and Toppings

  • 2 ounces Red onion (diced)
  • 20 ounces Cucumber (diced)
  • 8 ounces Tomato (diced)
  • 40 Kalamata Olives
  • 8 ounces Feta Cheese
  • 1 cup Tzatziki Sauce

Instructions

  1. Prepare the marinade: In a large bowl, combine garlic, red wine vinegar, lemon juice, extra virgin olive oil, Greek yogurt, dried oregano, salt, and black pepper. Whisk these ingredients together to create the marinade.
  2. Marinate the chicken: Place the chicken in a gallon freezer bag and pour the marinade over it. Seal the bag and refrigerate for 4 hours to allow the flavors to fully infuse.
  3. Cook the chicken: Remove the chicken from the marinade and wipe off any excess. Cook the chicken until it reaches an internal temperature of 165°F. You may grill it, bake it at 400°F for about 20 minutes, or cook it in a skillet over medium-high heat for 15-20 minutes to ensure it is fully cooked.
  4. Slice the chicken: Once cooked through, thinly slice the chicken to prepare it for serving.
  5. Assemble the bowl: Divide the sliced chicken, diced red onion, cucumber, tomato, Kalamata olives, feta cheese, and tzatziki sauce evenly among four bowls.
  6. Serve: Add a squeeze of fresh lemon juice over each bowl and gently toss the ingredients together before serving for a fresh and vibrant gyro bowl experience.

Notes

  • Marinating the chicken for at least 4 hours improves flavor and tenderness, but you can marinate overnight for even better results.
  • If you prefer a quicker option, cook the chicken directly without marinating, though flavor will be less intense.
  • Use fresh lemon juice for the best tangy flavor.
  • You can substitute grilled chicken with rotisserie chicken for a time-saving option.
  • Feel free to add warm pita bread on the side to create a more traditional gyro experience.
