Ingredients
Scale
Marinade and Chicken
- 16 ounces Chicken
- 2 cloves Garlic
- 1 tablespoon Red Wine Vinegar
- 2 tablespoons Lemon juice
- 2 tablespoons Extra virgin olive oil
- 3 tablespoons Greek yogurt
- 2 teaspoons Dried oregano
- ¾ teaspoon Salt
- ½ teaspoon Black pepper
Vegetables and Toppings
- 2 ounces Red onion (diced)
- 20 ounces Cucumber (diced)
- 8 ounces Tomato (diced)
- 40 Kalamata Olives
- 8 ounces Feta Cheese
- 1 cup Tzatziki Sauce
Instructions
- Prepare the marinade: In a large bowl, combine garlic, red wine vinegar, lemon juice, extra virgin olive oil, Greek yogurt, dried oregano, salt, and black pepper. Whisk these ingredients together to create the marinade.
- Marinate the chicken: Place the chicken in a gallon freezer bag and pour the marinade over it. Seal the bag and refrigerate for 4 hours to allow the flavors to fully infuse.
- Cook the chicken: Remove the chicken from the marinade and wipe off any excess. Cook the chicken until it reaches an internal temperature of 165°F. You may grill it, bake it at 400°F for about 20 minutes, or cook it in a skillet over medium-high heat for 15-20 minutes to ensure it is fully cooked.
- Slice the chicken: Once cooked through, thinly slice the chicken to prepare it for serving.
- Assemble the bowl: Divide the sliced chicken, diced red onion, cucumber, tomato, Kalamata olives, feta cheese, and tzatziki sauce evenly among four bowls.
- Serve: Add a squeeze of fresh lemon juice over each bowl and gently toss the ingredients together before serving for a fresh and vibrant gyro bowl experience.
Notes
- Marinating the chicken for at least 4 hours improves flavor and tenderness, but you can marinate overnight for even better results.
- If you prefer a quicker option, cook the chicken directly without marinating, though flavor will be less intense.
- Use fresh lemon juice for the best tangy flavor.
- You can substitute grilled chicken with rotisserie chicken for a time-saving option.
- Feel free to add warm pita bread on the side to create a more traditional gyro experience.
