Egg Mixture
- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Vegetables
- 1 cup chopped fresh spinach (or thawed and drained frozen spinach)
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
- Mix the eggs and cheeses: In a large mixing bowl, whisk together the eggs, cottage cheese, shredded mozzarella cheese, garlic powder, onion powder, salt, and ground black pepper until fully combined and smooth.
- Add the spinach: Stir in the chopped fresh spinach (or thawed and drained frozen spinach) until evenly incorporated into the egg mixture.
- Transfer to baking dish: Pour the mixture into the prepared baking dish and spread it out evenly with a spatula to ensure uniform cooking.
- Bake the casserole: Place the dish in the preheated oven and bake uncovered for 35–40 minutes, or until the top is lightly golden and the center is fully set and not jiggly.
- Cool and serve: Remove from the oven and allow the casserole to cool for 5–10 minutes before slicing. Serve warm or at room temperature for breakfast or brunch.
Notes
- You can substitute mozzarella with cheddar or any preferred melting cheese.
- For added flavor, consider adding chopped onions, bell peppers, or herbs like parsley or basil.
- If using frozen spinach, make sure it’s thoroughly thawed and excess water squeezed out to avoid sogginess.
- This casserole can be stored in the refrigerator for up to 3 days and reheated before serving.
- To make it lower in sodium, reduce or omit the added salt.
