Ingredients
Scale
Fruit and Dairy
- 1 1/2 cups diced strawberries (approximately 250g after dicing)
- 1 cup vanilla Greek yogurt or dairy-free Greek yogurt (240g)
Sweetener
- 2 tbsp honey or pure maple syrup (optional if using sweetened yogurt)
Chocolate Coating
- 1 cup chocolate chips (170g)
- 1 tbsp coconut oil (12g) (optional, for smoother chocolate coating)
Instructions
- Prepare the base mixture: Line a baking sheet or large platter with wax or parchment paper to prevent sticking. In a large mixing bowl, combine the diced strawberries, vanilla Greek yogurt, and honey or maple syrup (if using). Stir well until all ingredients are evenly mixed.
- Form the clusters: Use a spoon to drop dollops of the mixed yogurt and strawberry mixture onto the lined baking tray. Spread each dollop into a patty shape using the back of the spoon to create uniform clusters.
- Freeze the clusters: Place the baking sheet in the freezer for at least three hours or overnight to allow the clusters to fully freeze and set.
- Melt the chocolate: Carefully melt the chocolate chips using a microwave in short bursts or by employing a double boiler on the stovetop. For a smoother chocolate coating that coats the clusters easily, gently stir in the optional coconut oil into the melted chocolate until fully combined.
- Coat the clusters: Remove the frozen strawberry yogurt clusters from the freezer one at a time and dip each cluster into the melted chocolate to coat thoroughly. Place the coated clusters back on the lined tray.
- Set the chocolate coating: Return the coated clusters to the freezer for a few minutes to let the chocolate harden and set completely.
- Serve and store: Enjoy the healthy chocolate strawberry yogurt clusters cold straight from the freezer. Store any leftovers in a covered container in the freezer, where they will stay fresh for up to three months.
Notes
- Use dairy-free Greek yogurt for a vegan or lactose-free option.
- If the yogurt is already sweetened, you can omit the honey or maple syrup.
- Adding coconut oil to the melted chocolate helps achieve a smoother and shinier finish.
- These clusters must be kept frozen to maintain their texture and prevent melting.
- Leftovers can be stored frozen for up to three months in an airtight container.
