  • 1 cup beef broth (or water)
  • 1 tbsp olive oil or vegetable oil

  • 1 tsp cumin

  • ½ tsp black pepper

Instructions

  1. Cook the Beef: Heat oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed to prevent greasiness.
  2. Sauté the Veggies: Add diced onion, minced garlic, and diced bell pepper (if using) to the beef. Sauté for 3 to 5 minutes, until the vegetables are softened and fragrant, building the flavor base.
  3. Add Tomatoes & Spices: Stir in the diced tomatoes, tomato paste, chili powder, cumin, smoked paprika (optional), cayenne pepper (optional), salt, and black pepper. Mix well to combine all ingredients, and cook for 2 to 3 minutes to allow the flavors to meld.
  4. Add Beans & Simmer: Add the drained kidney beans and beef broth to the pot. Stir everything to combine, then bring the mixture to a boil. Reduce heat to simmer uncovered, and cook for 25 to 30 minutes, stirring occasionally, until the chili thickens to your desired consistency.
  5. Adjust & Serve: Taste the chili and adjust seasoning as needed. Serve the chili hot with your choice of optional toppings such as shredded cheese, sour cream, sliced green onions, or chopped cilantro for extra flavor and texture.
