Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef
- 1 onion, diced
- 4 garlic cloves, minced
- 3 cups potatoes, peeled and 1/2-inch diced
- 3 carrots, peeled and 1/4-inch sliced
- 3 ears corn, kernels removed
Seasonings and Sauces
- 1.5 tbsp olive oil
- 3 tbsp tomato paste
- 3 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- salt to taste
- black pepper to taste
Liquids and Toppings
- 1.5 cups beef broth
- 1 cup shredded cheddar cheese
Instructions
- Heat the olive oil: In a large skillet over medium heat, warm the olive oil until shimmering.
- Cook the ground beef: Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through about 5-7 minutes. Drain excess fat if necessary.
- Sauté onions and garlic: Add the diced onion and minced garlic to the skillet and cook until softened and fragrant, about 3-4 minutes.
- Add seasonings and sauces: Stir in the tomato paste, Worcestershire sauce, smoked paprika, salt, and black pepper. Mix well to combine with the beef and veggies.
- Add vegetables and broth: Stir in the diced potatoes, sliced carrots, corn kernels, and beef broth. Bring the mixture to a simmer, then reduce heat to medium-low.
- Simmer and cook vegetables: Cover the skillet and let it cook undisturbed for about 20 minutes or until the potatoes and carrots are tender, stirring occasionally to prevent sticking.
- Add cheese topping: Sprinkle the shredded cheddar cheese evenly over the top of the skillet.
- Melt the cheese: Cover again and cook for another 2-3 minutes until the cheese is melted and bubbly.
- Serve: Remove from heat and serve hot, enjoying the comforting blend of hearty ground beef and vegetables.
Notes
- You can substitute the ground beef with ground turkey or chicken for a leaner option.
- If you prefer a spicier kick, add a pinch of cayenne pepper or red chili flakes with the paprika.
- Use pre-cut frozen potatoes and carrots for faster prep but adjust cooking time if needed.
- For a vegetarian version, substitute beef with plant-based ground meat and use vegetable broth.
- This dish reheats well and makes excellent leftovers for lunch or dinner the next day.
