Instructions

  2. Prepare herb butter: In a large bowl, combine the melted unsalted butter with the minced fresh garlic, finely chopped rosemary and thyme, along with salt and freshly ground black pepper to taste. Mix well to create a flavorful herb butter.
  3. Coat potatoes: Toss the baby potatoes in the herb butter mixture until they are completely and evenly coated. This ensures each potato will absorb the aromatic flavors as it roasts.
  4. Arrange and bake: Spread the coated potatoes in a single layer on the prepared baking sheet, making sure they’re not crowded to allow for even roasting. Bake in the preheated oven for 30 to 35 minutes until the potatoes develop a golden brown, crispy exterior.
