Instructions

  1. Brown the Sausages: Heat olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until browned on all sides, about 8–10 minutes. Remove the sausages from the skillet and set them aside to rest.
  2. Sauté the Vegetables: In the same skillet, add the sliced red, yellow, and green bell peppers along with the sliced onion. Sauté the vegetables for 5–7 minutes until they begin to soften but still retain some crunch. Then stir in the minced garlic, salt, black pepper, dried oregano, and crushed red pepper flakes if using. Cook for an additional minute to release the flavors.
  3. Combine and Simmer: Slice the browned sausages into 2-inch pieces and return them to the skillet with the vegetables. Pour in the chicken broth or white wine and stir to distribute the liquid and seasoning evenly.
  4. Cook Until Tender: Reduce the heat to low, cover the skillet, and let it simmer for 10–12 minutes. This allows the sausages to cook through fully and the vegetables to become tender while absorbing the savory broth.
