Kalimera’s Famous Greek Chicken Gyros is a flavorful Greek-inspired recipe featuring marinated chicken thighs grilled or pan-cooked to perfection, wrapped in warm pita bread with a creamy paprika-mustard sauce, fresh veggies, and optional crispy chips. Perfect for a delicious, hearty Mediterranean meal enjoyed at home.

Chicken Marinade

  • 1.25 kg / 2.5 lb chicken thighs, skinless boneless
  • 1 tbsp sweet paprika (regular paprika, not smoked or spicy)
  • 1 tbsp mustard powder (or substitute with Dijon mustard)
  • 1 tbsp dried oregano (preferably Greek)
  • 1/2 tbsp mild curry powder (secret ingredient)
  • 1 1/2 tsp kosher cooking salt (halve if using table salt, increase by 50% if using flakes)
  • 1/2 tsp black pepper
  • 1/3 cup extra virgin olive oil

Sauce

  • 1 cup plain yoghurt (preferably Greek or Greek-style)
  • 3 tbsp whole-egg mayonnaise (or regular mayonnaise)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp yellow American mustard (or substitute Dijon mustard)
  • 2 tsp garlic powder
  • 2 tsp sweet paprika
  • 1/2 tsp kosher cooking salt

Additional Fillings

  • 2 tomatoes, halved and sliced
  • 3 cups cos lettuce (romaine), finely sliced (5mm / 0.2″)
  • 1/2 small red onion, diced (5mm / 0.2″ squares)
  • 5 x 20cm / 8″ pita breads, soft and slightly bready kind preferred
  • 400g / 14oz thick-cut frozen chips (optional)
  • Pinch table salt (for chips or chicken salt)


Instructions

  1. Marinate Chicken: In a large bowl, mix paprika, mustard powder, dried oregano, curry powder, salt, black pepper, and olive oil. Add chicken thighs and coat thoroughly. Cover and refrigerate for 24 hours minimum (at least 3 hours for quick marination) to allow deep flavor absorption.
  2. Prepare Sauce: In a separate bowl, combine plain yoghurt, whole-egg mayonnaise, olive oil, yellow mustard, garlic powder, paprika, and salt. Mix well and set aside for at least 20 minutes to let flavors meld.
  3. Cook Chips (Optional): If using frozen chips, cook them before the chicken using your preferred method—baking, frying, or air frying. Season with a pinch of salt. Keep warm in a low oven at 100°C (200°F) until assembly.
  4. Cook Chicken: BBQ Method (Recommended): Preheat BBQ on medium-high heat. Grill chicken thighs 3-4 minutes per side until deep golden with slightly charred edges and internal temp reaches 72°C (162°F). Stovetop Method: Heat a large non-stick pan over medium-high heat without oil. Cook chicken in batches 3-4 minutes per side until golden and cooked through. Wipe pan between batches to remove burnt bits.
  5. Rest and Slice Chicken: Transfer cooked chicken to a tray, loosely cover with foil, and rest for 3 minutes. Slice into 1 cm (0.4 inch) thick pieces.
  6. Warm Pita Bread: Heat pita bread until warm and pliable, either by microwaving for 45-90 seconds stacked on a plate or stovetop by brushing both sides with water and heating in lightly oiled non-stick pan for 1 minute per side over medium-high heat. Avoid crisping the pita to prevent cracking when folded.
  7. Assemble Gyros: Spread 3 tablespoons of sauce down the center of each pita. Layer sliced chicken over the sauce, add lettuce and sliced tomato on one side, then sprinkle diced red onion. Top with warm chips if using. Drizzle with more sauce. Fold pita around fillings and wrap in foil to secure.
  8. Serve: Serve gyros immediately with extra sauce on the side for dipping.
