Ingredients
Scale
Mushrooms
- 1 lb Mushroom (button or cremini), cleaned
Marinade
- 3 tbsp Olive oil
- 2 tbsp Soy sauce
- 1 tbsp Balsamic vinegar
- 2 cloves minced Garlic
- 1 tsp chopped Thyme or Rosemary
- ½ tsp Black pepper
- 1 tsp Honey or Maple syrup (optional for slight sweetness)
Instructions
- Make the marinade: In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, minced garlic, chopped thyme or rosemary, black pepper, and optional honey or maple syrup until fully combined to form a flavorful marinade.
- Marinate the mushrooms: Add the cleaned mushrooms to the marinade and toss well to coat each mushroom evenly. Let the mushrooms sit in the marinade for 20 to 30 minutes, allowing them to absorb the savory and slightly sweet flavors.
- Skewer: Thread the marinated mushrooms onto metal skewers or soaked wooden skewers, spacing them evenly but not too tightly to ensure even grilling.
- Grill: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 8 to 10 minutes, turning occasionally to get an even char and cooking until the mushrooms are tender and smoky.
- Serve: Remove the skewers from the grill and optionally sprinkle with fresh herbs or a squeeze of lemon juice for an added burst of freshness. Serve hot as a delicious side dish or vegetarian main.
Notes
- You can add variety by alternating mushrooms with bell pepper, zucchini, red onion, or cherry tomatoes on the skewers.
- Larger mushrooms like Portobello can be used but should be cut into chunks before skewering.
- Soak wooden skewers for at least 30 minutes before grilling to prevent burning.
- Adjust the sweetness of the marinade by adding or omitting honey or maple syrup according to taste.
- Skewers can be cooked on a grill pan or stovetop grill if outdoor grilling is not available.
