Description
A hearty and flavorful one-pot meal featuring smoked sausage, tender green beans, and golden potatoes cooked together for a savory and comforting dish in just 30 minutes.
Ingredients
Scale
Meat
- 14 ounces smoked sausage (see notes)
Vegetables
- 2 pounds yellow potatoes (Yukon Gold recommended), about 4-6 medium, cut into 1-inch chunks
- 1 pound green beans, fresh, rinsed, and trimmed
Seasonings & Others
- 2 tablespoons butter
- ½ teaspoon paprika (smoked paprika preferred)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 ½ cups low-sodium chicken broth
Instructions
- Prep Ingredients: Slice the smoked sausage into ½-inch rounds. Dice the onion if using (although not mentioned in final ingredients, the instructions include dicing an onion). Cut the potatoes into 1-inch chunks for even cooking.
- Mix Seasoning: In a small bowl, combine the paprika, garlic powder, onion powder, salt, and black pepper to create a balanced seasoning blend.
- Brown Sausage: Spray a Dutch oven or deep pan with cooking spray and heat it over medium-high heat. Add the sliced sausage and cook, stirring occasionally, until browned for about 4-5 minutes. Remove the browned sausage and set it aside on a plate.
- Sauté Potatoes: Add the butter to the same pot over medium-high heat. Add the potatoes and half of the seasoning mixture. Cook and stir occasionally until the potatoes begin to brown, which should take about 5-6 minutes.
- Add Green Beans and Broth: Add the trimmed green beans to the pot with the potatoes. Sprinkle the remaining seasoning over the vegetables and gently mix to coat. Pour the low-sodium chicken broth evenly over the green beans and potatoes.
- Cook: Cover the pot with a lid, reduce the heat to medium, and allow the mixture to cook for 15 minutes, or until the potatoes and green beans are tender and cooked through.
- Combine and Serve: Return the browned sausage to the pot and mix everything well to combine the flavors. Serve hot as a complete one-pot meal.
Notes
- Use smoked paprika if available to enhance the dish’s smoky flavor.
- Yukon Gold potatoes are recommended for their creamy texture and ability to hold shape during cooking.
- Low-sodium chicken broth helps control the salt content in the dish.
- For a spicier variation, consider adding a pinch of cayenne pepper to the seasoning.
- This recipe can be adapted to use kielbasa or other smoked sausages based on preference.
- Make sure to trim and rinse the green beans thoroughly to avoid any grit.
