Description

This Queso Steak Fajita Skillet is a quick and flavorful one-pan meal featuring tender top sirloin, sautéed bell peppers and onions, seasoned with fajita spices, and simmered together with rice, tomato sauce, and chicken broth. Finished with creamy, melty cheese dip, it’s perfect for a satisfying dinner that comes together in just 30 minutes.

Ingredients

Scale

Protein and Vegetables

  • 1 pound top sirloin, sliced into thin pieces
  • ½ yellow onion, chopped
  • 3 bell peppers, cut into strips

Liquids and Sauces

  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 8 ounces tomato sauce

Grains and Seasoning

  • 2 cups Minute Rice
  • 1 packet fajita seasoning

Cheese

  • Velveeta cheese dip or any melty cheese dip, as desired

Instructions

  1. Sauté Vegetables and Steak: Heat olive oil in a skillet over medium-high heat. Add the chopped onion and bell pepper strips and sauté until they begin to soften, about 3-4 minutes. Then, add the thinly sliced top sirloin and sprinkle with fajita seasoning. Cook everything together, stirring occasionally, until the steak is cooked to your liking.
  2. Incorporate Rice and Liquids: Add the Minute Rice, tomato sauce, and chicken broth to the skillet. Stir thoroughly to combine all ingredients. Reduce heat to medium and allow the mixture to simmer. Follow the rice package instructions for cooking time, typically about 5 minutes. If the mixture looks too dry, add a little more chicken broth as needed during cooking.
  3. Finish with Cheese Dip: Once the rice is fluffy and the skillet contents have thickened, spoon the warm Velveeta or chosen cheese dip over the skillet. Allow the cheese to melt thoroughly into the mixture, which should take a couple of minutes.
  4. Plate and Serve: Scoop the cheesy steak fajita skillet onto plates while hot. Serve immediately to enjoy the best flavor and texture.

Notes

  • You can substitute the top sirloin with flank steak or skirt steak for similar results.
  • Adjust the amount of fajita seasoning based on your spice preference.
  • For a vegetarian version, omit the steak and use vegetable broth instead of chicken broth, adding extra bell peppers or mushrooms.
  • Minute Rice cooks quickly, but if using a different rice variety, adjust cooking time and liquid amounts accordingly.
  • Use any cheese dip that melts well; Velveeta is creamy but you can try queso blanco or a Monterey Jack cheese dip as alternatives.
