Energy Ball Mixture

  • 1 cup medjool dates, pitted (approx 10 dates)
  • 3/4 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 Tbsp raw cacao powder
  • 1 tsp peppermint extract (food grade)
  • 1/2 tsp vanilla extract
  • 2 Tbsp water
  • Pinch of sea salt

Optional Toppings

  • Mini chocolate chips
  • Extra desiccated coconut


Instructions

  1. Prep: Line a small baking sheet with parchment paper to prepare for setting the energy balls.
  2. Combine: Place all ingredients except the optional toppings into a large food processor. Pulse until the mixture starts to come together and forms a sticky mass suitable for shaping.
  3. Roll: Using approximately a tablespoon of the mixture at a time, roll it between your palms to form smooth balls.
  4. Optional Toppings: If desired, pour extra coconut flakes or mini chocolate chips into small dishes. Roll each ball in your choice of topping, gently pressing to adhere. Alternatively, leave the balls plain without toppings.
  5. Freeze: Arrange the formed energy balls on the prepared baking sheet. Freeze for 1 hour to firm up and set before serving.
