Energy Ball Mixture
- 1 cup medjool dates, pitted (approx 10 dates)
- 3/4 cup almond flour
- 1/2 cup desiccated coconut
- 3 Tbsp raw cacao powder
- 1 tsp peppermint extract (food grade)
- 1/2 tsp vanilla extract
- 2 Tbsp water
- Pinch of sea salt
Optional Toppings
- Mini chocolate chips
- Extra desiccated coconut
Instructions
- Prep: Line a small baking sheet with parchment paper to prepare for setting the energy balls.
- Combine: Place all ingredients except the optional toppings into a large food processor. Pulse until the mixture starts to come together and forms a sticky mass suitable for shaping.
- Roll: Using approximately a tablespoon of the mixture at a time, roll it between your palms to form smooth balls.
- Optional Toppings: If desired, pour extra coconut flakes or mini chocolate chips into small dishes. Roll each ball in your choice of topping, gently pressing to adhere. Alternatively, leave the balls plain without toppings.
- Freeze: Arrange the formed energy balls on the prepared baking sheet. Freeze for 1 hour to firm up and set before serving.
