  • 45 baby bok choy, halved lengthwise
  • 3 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 teaspoon sesame seeds (optional)
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste


Instructions

  1. Heat the oil: Heat 1 tablespoon of sesame or olive oil in a large skillet or wok over medium-high heat.
  2. Sauté garlic: Add the minced garlic to the hot oil and cook for about 30 seconds until fragrant, taking care not to burn it.
  3. Add bok choy: Place the halved bok choy cut side down in the skillet and cook for 2 to 3 minutes without stirring to allow a slight sear.
  4. Flip and cook: Turn the bok choy over and cook for another 2 to 3 minutes until the stems are tender but still crisp and the leaves are wilted.
