Sauce and Marinade
- ½ cup low sodium soy sauce
- ¼ cup rice vinegar
- ¼ cup brown sugar
- 1 tablespoon grated ginger root
- 4 garlic cloves, minced
- 1 teaspoon toasted sesame oil
- ½ teaspoon sambal oelek

Instructions
- Preheat oven and prepare baking sheet: Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment paper and set aside to make cleanup easier.
- Make the Soy Ginger sauce: In a bowl, whisk together the soy sauce, rice vinegar, brown sugar, grated ginger, minced garlic, toasted sesame oil, and sambal oelek until the sugar dissolves and the sauce is well combined. Reserve ¼ cup of this sauce separately for brushing during cooking.
- Marinate the chicken: Place the chicken thighs in a shallow bowl and pour the remaining sauce over them. Turn the chicken pieces to fully coat and partially submerge them. Cover and marinate for at least 30 minutes, preferably overnight in the refrigerator for deeper flavor.
- Transfer chicken to baking sheet: Remove the chicken thighs from the marinade, allowing excess sauce to drip off, and discard the used marinade. Arrange the chicken evenly on the prepared baking sheet.
- Bake and baste the chicken: Bake the chicken in the preheated oven for 10 minutes. Remove and brush the reserved sauce over the chicken pieces, then return to the oven.
- Continue cooking with additional baste: After 5 minutes, remove the chicken once more, brush with the reserved sauce again, and bake for an additional 3-5 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish and serve: Once cooked through, remove the chicken from the oven and sprinkle with sesame seeds and thinly sliced scallions if desired. Serve hot and enjoy!
