Super Soft Roti is a traditional Indian unleavened flatbread made from whole wheat flour. This easy recipe yields tender, pliable rotis that puff up beautifully on the skillet, perfect to accompany curries, dals, and vegetable dishes.

- 3/4 cup warm water (add more if needed)
- 1 tablespoon vegetable oil or ghee (plus more for brushing)
Instructions
- Mix dry ingredients: In a mixing bowl, combine the whole wheat flour and salt thoroughly to ensure even seasoning throughout the dough.
- Add water gradually: Slowly pour in the warm water while mixing the flour with your hand or a spoon until a soft dough begins to form, adding a little more water if necessary for consistency.
- Knead the dough: Add the oil or ghee and knead the dough on a clean surface for 8–10 minutes until it becomes smooth, elastic, and no longer sticky.
- Rest the dough: Cover the dough with a damp cloth or plastic wrap and let it rest for 20–30 minutes to relax the gluten, which helps in rolling out soft rotis.
- Divide and roll: Divide the rested dough into 8 equal-sized balls. On a lightly floured surface, roll each ball into a thin, even circle about 6–7 inches in diameter.
- Heat skillet: Place a skillet or tava on medium heat and let it get hot before cooking the rotis to ensure even puffing and cooking.
- Cook the rotis: Place a rolled roti onto the hot skillet. Cook for about 30 seconds until bubbles start to form, then flip to the other side for another 30 seconds until brown spots appear. Flip again and gently press with tongs to encourage the roti to puff up.
- Brush and keep warm: Remove the cooked roti and brush with ghee or oil. Stack cooked rotis and cover them with a clean kitchen towel to keep warm and soft while you cook the remaining ones.
- Serve: Serve the super soft rotis warm with your favorite Indian dishes like curries, dal, or vegetables for an authentic meal experience.
