Tamer Hindi is a traditional refreshing tamarind drink known for its tangy and sweet flavor. This easy-to-make beverage combines soaked tamarind pulp with sugar and water, simmered to extract deep fruity notes, then chilled and served over ice, perfect for cooling down on a hot day.

- 200 grams tamarind pulp, seedless
- 1 cup sugar
- 5 cups water
- 1/4 teaspoon baking soda (optional)

Instructions
- Soak Tamarind: Soak the tamarind pulp in 3 cups of water in a large bowl for at least 4 hours or overnight. This softens the pulp and begins to release its flavorful juices.
- Simmer the Mixture: Transfer the soaked tamarind along with the soaking water into a saucepan. Simmer gently for 10 minutes to further extract the tangy flavor from the pulp.
- Mash and Sweeten: Using a spoon, mash the softened tamarind pulp to release more juice. Add the remaining 2 cups of water and the sugar to the saucepan, stirring thoroughly to dissolve the sugar completely. Let the mixture cool down.
- Strain: Pour the tamarind mixture through a fine mesh sieve or cheesecloth into a pitcher to separate the liquid from any solids, discarding the pulp residues.
- Chill and Serve: Refrigerate the strained tamarind drink until well chilled. Serve over ice cubes and optionally garnish as you like for a refreshing treat.

- For a fizzy twist, add a pinch of baking soda to the drink just before serving; it will cause gentle fizzing due to reaction with tamarind’s acidity.
- You can adjust the sweetness by varying the amount of sugar according to your taste preference.
- Straining thoroughly ensures a smooth drink free from fibers or seeds.
- Soaking tamarind overnight intensifies flavor, but a minimum of 4 hours is sufficient if short on time.
