Instructions
- Blend the cucumber. Place the peeled and chopped cucumber chunks into a blender and blend until smooth, creating a fresh cucumber puree.
- Muddle the mint and sugar. In a bowl, gently muddle the fresh mint leaves with the granulated sugar to release the mint oils and combine flavors.
- Combine ingredients. Mix the blended cucumber puree, fresh lime juice, dry gin, and the muddled mint and sugar mixture together thoroughly in a large bowl.
- Fill the molds and freeze. Pour the combined mixture evenly into popsicle molds and place them in the freezer for 4 to 6 hours or until completely solidified.
Notes
- Adjust the sugar quantity to taste if you prefer a sweeter or less sweet popsicle.
- For a non-alcoholic version, omit the gin and replace it with sparkling water or club soda.
