- 2 tbsp soy sauce (or tamari for gluten-free)
- 1/2 cup water (adjust for desired sauce consistency)

- 1/2 tsp ground ginger (optional)

Instructions
- Prepare the Mango: If using fresh mango, peel and chop into small chunks. Skip this step if using mango puree.
- Cook the Sauce Base: Heat olive oil over medium heat in a medium saucepan. Add minced garlic and cook for 1 minute, stirring constantly to prevent burning. Add chopped mango and habanero peppers, stir well, and cook for 3-4 minutes until mango softens.
- Blend the Sauce: Add honey, vinegar, soy sauce, ground ginger (if using), and a pinch of salt and pepper to the saucepan. Stir and cook for 2-3 minutes. Use an immersion blender to puree until smooth; alternatively, transfer to a blender and blend until creamy. Add water gradually (starting with 1/4 cup) to reach desired consistency.
- Simmer the Sauce: Return blended sauce to saucepan. Simmer gently over low heat for 5-10 minutes to deepen flavors and thicken slightly. Taste and adjust seasoning with additional honey, vinegar, salt, or pepper as desired.
- Cool and Serve: Remove from heat and cool slightly before serving. Use as a glaze brushed on grilled meats or vegetables, or serve as a dipping sauce or drizzle over tacos and roasted veggies.
