- 2 tbsp Extra virgin olive oil
- 2 tbsp Fresh lemon juice
- 2 tbsp Finely chopped dill (or parsley)
- 2 tbsp Finely chopped mint leaves
- 2 tbsp Finely chopped cilantro leaves
Instructions
- Preparation: Preheat your oven to 400°F (200°C). Gather and measure all ingredients for the meatballs, rice, and sauce.
- Mix Meatball Ingredients: In a large bowl, combine ground lamb, minced garlic, kosher salt, black pepper, allspice, turmeric, paprika, cumin, large egg, and tapioca flour. Mix gently until just combined to avoid a dense texture.
- Form Meatballs: Shape the mixture into small meatballs approximately the size of golf balls. Arrange them spaced out on a parchment-lined baking sheet to ensure even cooking.
- Bake Meatballs: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the meatballs have browned and reach an internal temperature of 160°F (71°C).
- Sauté Onions: While the meatballs bake, heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add diced white onions and sauté for about 3-4 minutes until translucent and fragrant.
- Toast Rice: Stir in the white basmati rice to the saucepan with onions, allowing it to toast lightly for 2-3 minutes to enhance its flavor and texture.
- Add Broth and Spices: Add kosher salt, ground turmeric, optional saffron threads, lemon zest, and chicken broth to the rice mixture. Bring the liquid to a boil, then cover the saucepan and reduce heat to a simmer.
- Cook Rice: Let the rice simmer covered for 15-20 minutes until the liquid is absorbed and the rice is tender and fluffy.
- Prepare Yogurt Sauce: In a separate bowl, combine plain Greek yogurt, olive oil, fresh lemon juice, chopped dill, mint, and cilantro. Stir until smooth and well mixed.
- Assemble & Serve: Once meatballs and rice are done, layer the meatballs over the fluffy herbed rice. Drizzle generously with the herby yogurt sauce and serve immediately for a delightful meal.
Notes
- You can substitute chicken broth with vegetable broth to make the dish fully vegetarian except for the lamb meatballs.
- Use almond flour if you prefer a gluten-free binder instead of tapioca flour.
- Ensure meatballs are cooked to an internal temperature of 160°F for safe consumption.
- Saffron adds a unique flavor and color but is optional and can be omitted if unavailable.
- The fresh herbs in the yogurt sauce provide a bright contrast to the savory meatballs and rice – feel free to adjust the herb ratio to your taste.
