Lamb Meatballs

  • 1 tsp Paprika
  • 1 tsp Cumin (or coriander)
  • 1 large Large egg
  • 1/4 cup Tapioca flour (or almond flour)

Rice

  • 2 tbsp Extra virgin olive oil
  • 1 cup Diced white onion
  • 1 cup White basmati rice
  • 2 cups Chicken broth (or vegetable broth)
  • 1/4 tsp Saffron threads (optional)
  • 1 tbsp Lemon zest
  • 1 tsp Kosher salt
  • 1 tsp Ground turmeric (included in meatballs and rice)

Herby Yogurt Sauce

  • 1 cup Plain Greek yogurt
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Fresh lemon juice
  • 2 tbsp Finely chopped dill (or parsley)
  • 2 tbsp Finely chopped mint leaves
  • 2 tbsp Finely chopped cilantro leaves


Instructions

  1. Preparation: Preheat your oven to 400°F (200°C). Gather and measure all ingredients for the meatballs, rice, and sauce.
  2. Mix Meatball Ingredients: In a large bowl, combine ground lamb, minced garlic, kosher salt, black pepper, allspice, turmeric, paprika, cumin, large egg, and tapioca flour. Mix gently until just combined to avoid a dense texture.
  3. Form Meatballs: Shape the mixture into small meatballs approximately the size of golf balls. Arrange them spaced out on a parchment-lined baking sheet to ensure even cooking.
  4. Bake Meatballs: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the meatballs have browned and reach an internal temperature of 160°F (71°C).

  8. Cook Rice: Let the rice simmer covered for 15-20 minutes until the liquid is absorbed and the rice is tender and fluffy.
  9. Prepare Yogurt Sauce: In a separate bowl, combine plain Greek yogurt, olive oil, fresh lemon juice, chopped dill, mint, and cilantro. Stir until smooth and well mixed.
  10. Assemble & Serve: Once meatballs and rice are done, layer the meatballs over the fluffy herbed rice. Drizzle generously with the herby yogurt sauce and serve immediately for a delightful meal.
