Description

A hearty and delicious Sausage and Tater Tot Breakfast Quiche perfect for a satisfying morning meal. This recipe combines crispy baked tater tots as a crust with savory cooked breakfast sausage, creamy eggs, cottage cheese, and melted mozzarella, baked to golden perfection and garnished with fresh parsley.

Ingredients

Scale

Crust

  • 2 cups frozen tater tots

Filling

  • ½ pound ground breakfast sausage
  • 6 large eggs
  • ½ cup low fat cottage cheese (2%)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated mozzarella cheese

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Preheat and Bake Tater Tots: Preheat your oven to 400°F (200°C). Grease a 9-inch deep-dish pie dish with butter to prevent sticking. Place the frozen tater tots evenly in the pie dish and bake for 15 minutes until they are partially cooked and starting to crisp.
  2. Mash Tater Tots: After baking, remove the dish from the oven. Using a spoon or spatula, gently mash the tater tots into an even layer, pressing them up the sides of the dish to form a crust for the quiche.
  3. Adjust Oven Temperature: Reduce the oven temperature to 350°F (175°C) to prepare for baking the quiche filling.
  4. Cook Sausage: While the oven cools, cook the ground breakfast sausage in a skillet over medium to medium-high heat. Stir and crumble until fully cooked and browned. Remove from heat and let it cool slightly.
  5. Prepare Filling Mixture: In a large bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper until well combined. Stir in the grated mozzarella cheese and the cooked sausage thoroughly.
  6. Assemble and Bake Quiche: Pour the egg and sausage mixture evenly over the tater tot crust in the pie dish. Place the dish in the oven and bake for 30 minutes or until the center is set and no longer jiggly.
  7. Cool and Serve: Remove the quiche from the oven and let it cool for at least 5 minutes before slicing. Garnish with freshly chopped parsley if desired, then serve warm and enjoy your delicious breakfast quiche!

Notes

  • Make sure not to overcook the tater tots initially; they need to be soft enough to mash but still hold together as a crust.
  • You can substitute the breakfast sausage for turkey sausage or a vegetarian alternative to suit dietary preferences.
  • For extra flavor, consider adding diced onions or bell peppers to the cooked sausage.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • This recipe can easily be doubled for a larger crowd using a bigger baking dish.
